Paleo Coconut Crusted Chicken




I have been craving coconut crusted chicken and last night was the night to finally make it!

This was so easy and delicious! And the Parmesan Zucchini Bites were a great side dish to accompany it.

Ingredients:
4 Small Chicken Breasts
1/2 C Shredded Coconut
1/2 C Almond Flour
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
Salt and Pepper
1 Egg

In a shallow dish add your egg and beat

In a separate shallow dish add almond flour, coconut, garlic and onion powders, salt and pepper.

Submerge your chicken breast in the egg, and then to the flour bowl, generously coating each side

Spray your skillet with coconut oil cooking spray, add EVOO, or butter and heat on medium

Add chicken to skillet and cook approx. 5 min, flip and cook another 5 min.

Remove and serve immediately with side of your choice.
