Chili Colorado

 





Another quick and easy dinner, this time in the crock pot.

Starting with the ingredients and we'll go from there.

1.5 lbs of pork shoulder chunk

28oz can green chile enchilada sauce 

4 oz can diced green chilis 

8oz cream cheese 

2 TBSP Mexican oregano 

1 tsp garlic powder

1 tsp cumin

Ground black pepper and 2 dashes of salt






Add pork to bottom of crock pot

Add green enchilada sauce,  cream cheese, green chilis, and all spices, stir briefly.

Cover and cook on high 5 1/2 to 6 hours.

Pork will be tender and shred easily with forks.

Add black beans last 30 min of cooking for the fiber, and if you kept at your goal carb count for the day.

Serve over cauliflower rice and top with monterey jack cheese.
