Gluten Free Paleo Chocolate Chip Cookies
I was looking for another sweet tooth satisfier when I came across chocolate chip cookies. WHAT??
I don't mess with classics too much, so while comparing recipes on almond flour vs coconut flour, I decided to attempt these quick cookies after dinner.
Recipe:
2 eggs
1/4 C honey
1/3 C coconut flour
1/3 C dark chocolate chips (*For a truly paleo variety, use Enjoy life brand chocolate chips)
1 pinch of sea salt
1 tsp vanilla
1/4 C solid coconut oil
Preheat oven to 350.
Line baking sheet with parchment paper or nonstick foil
Mix all ingredients EXCEPT chocolate chips in mixing bowl with whisk (about 3 minutes)
If your batter is too runny, add small amounts of coconut flour til it firms slightly. Try to stir a bit more, first, as my batter was perfect. Make sure to break up any coconut oil chunks.
Add chocolate chips. Eat a few.
Use a tablespoon to scoop batter onto cookie sheet. Smash down into desired shape. These don't really rise. So you don't have to leave too much room between them.
Bake 10-15 minutes. Edges should be golden. These DON'T firm, but bottoms can burn. Mine cooked 13 minutes.
Cool for at least 10 minutes.
Eat. These are soft and delicious! I think I will add shredded coconut and sub for almond flour next time to make them more like almond joy!
