Zoodles for Dinner
I don't have the proper equipment needed to make zoodles, so I typically just slice zucchini and cook it that way. But when I recently found ready to serve zoodles at Target, I could not resist grabbing some!
Since I am well stocked on frozen vegetables and meats, it was easy to put together a quick dinner of zoodles, broccoli, gf paleo bread, and an entree of lemon chicken.

My mistake with the zoodles was in trying to cook them like spaghetti noodles, which they are not. I should have just sauteed them in some olive oil and then served, which I will do next time.
The broccoli was frozen, heated on the stove for 15 min with salt and pepper and butter, the chicken was cooked in broth and lemon juice, garnished with lemon slices for about 15 min. The GF Paleo bread was made the previous day, then frozen. I slice off what I want to serve, let thaw while making dinner, then microwave for 10 seconds and plate. Add butter and a drizzle of honey and it is just amazing! This whole dinner took about 30 min with prep included. Simple and delicious!
