GF Paleo Pancakes

Breakfast!

I was getting pretty tired of eggs and vegetables for breakfast on the daily so I was looking for something just as filling, but not time consuming.
Pancakes to the rescue!  I am not usually a fan of pancakes, as I find them to be a bit too heavy for me as a breakfast meal. However, I do enjoy a bite of them if someone else is eating them!

Scouring the internet for recipes that are made with ingredients I have on hand has been a bit time consuming, but I am learning what things I can sub out for more healthy options, so it is well worth it!

For these pancakes, the total time, prep, cook, cleanup was under 20 minutes.
I am a fan of doing the dishes while things are cooking, or immediately after so I can leave the kitchen clean, and this recipe was so quick, I was able to accomplish that!

Recipe:
GF Paleo Pancakes
1 C almond flour
1/4 C water
2 eggs
1 Tbsp maple syrup
1/4 tsp salt

butter for cooking

melt butter in pan or on griddle
whisk all ingredients in bowl til batter is smooth, pour out in desired size (I use the 1/4 c scoop to pour into small circles.)
Cook 3-5 min each side, eat. Enjoy!

I made small pancakes, so I was able to get 10 out of this recipe. I ate 3, immediately wrapped and refrigerated the rest for the next day.   To reheat- place on plate, heat 30 seconds in microwave, top with butter, maple syrup and blueberries if desired!  Delicious!

*Photo is of reheated pancakes for breakfast the next day.  I use unblanched almond flour so mine has brown flecks. Taste is not affected.
