Easy low Carb Biscuits
Ingredients:
1 1/2 C Almond Flour ( I use unblanched almond flour, in bulk from Winco)
1/4 tsp Salt (Morton brand)
1 TBSP Baking Powder (Clabber Girl)
2 Eggs (We use free range organic brown eggs, but I have made these with cheap white store bought eggs, as well)
1/3 C Sour Cream (Tillamook)
4 TBSP melted butter (Kerry Gold)
1/3 C Shredded Cheddar Cheese (can omit)
1/2 tsp. Garlic Powder (Winco brand)
Preheat oven to 400.
Spray muffin pan or use Reynolds non stick foil on a baking sheet (my preferred method).
Combine all dry ingredients with a fork to break up clumps.
Combine all wet ingredients in a separate bowl until consistent and smooth.
Make a crater in dry ingredients and add wet ingredients into it.
Start mixing from the sides towards the center.
Add your cheese!
Add to your muffin pan or baking dish in even clumps.
Bake for 10-12 minutes.
Let cool for at least 5 min.
Brush garlic butter on the tops (like Red Lobster style)
Or cut in half and use as slider buns.
These freeze well, or you can leave them in ziploc for a few days til they are gone!
