Sloppy Joe Stuffed Bell Peppers
We LOVE love love green peppers in our house.
We eat at least 3 per week in various dishes/salads, etc.
So when I was looking for beef ideas and found sloppy joe in pepper alternatives, I was pretty thrilled! My grandma used to make sloppy joe's for me when I stayed over, so this brought back good memories and a new improved taste!
Ingredients:
1 lb. Ground Beef
4 Bell Peppers cut lengthwise
2 Garlic cloves crushed or 1 TBSP garlic powder
1 smallish Yellow Onion
1/3 C Low sodium beef broth
1 TBSP Tomato paste
1/3 C Ketchup
1 C Tomato Sauce
Pepper
Salt
1 TBSP Organic Palm Sugar or equivalent
1 TBSP Apple Cider vinegar
2 TBSP EVOO (Extra Virgin Olive Oil)
1 C Monterey Jack Cheese
Preheat oven to 400.
In large skillet over medium, heat olive oil. Cook onion til soft about 5 min. Add tomato paste and garlic and cook about 2 minutes. Add ground beef, salt and pepper, as desired and cook til no longer pink. About 5 minutes.
Reduce heat to low and add in tomato sauce, ketchup, apple cider vinegar, and sugar.
Let simmer til slightly thicker. About 5 min.
In your large baking dish, add peppers. Divide mix evenly among all 8 halves and add cheese to tops.
Pour beef broth in bottom of baking dish and cover with foil.
Bake 45 min. Uncover, and bake 5 more min or til cheese is golden, as desired.
Serve and enjoy!
Notes: last time I used this full recipe in only 4 peppers cut in half as we love this so much and wanted it to be very meaty. Photos represent this method.
