Keto Tuna Salad



I love sandwich alternatives on the keto diet, as I am a huge fan of bread.  Anything I can have in place is great. Lettuce wrap, low carb biscuit sandwich, meat and cheese roll up. Whatever I can fool myself into pretending is a slice of bread and I am down to try!

Today I was looking for a lunch option and wanted to use what I had on hand, so I came up with this tuna salad.

Ingredients:

2- 5oz. cans Chunk light tuna in water
1/4 C cherry tomatoes diced
1/4 C Red onion diced
1/4 C Cucumber chopped
Pinch Sea Salt
Pepper to taste
Mayo to taste


You can use any type of tomatoes you prefer. Roma's were suggested, but I had cherry tomatoes on had so that's what I used. Added in the red onion for taste and texture.

Mix all ingredients, add mayo to taste.  I don't measure it out, I just squeeze it in til I have the desired amount to evenly coat all ingredients.

Stir well. Eat as it, or serve in butter lettuce.

Veggies chopped and ready for tuna!
