Coconut Flour GF Pizza Crust
Coconut Flour is my preferred choice for pizza crust.
Though it does sit very heavy, it tastes much better to me than almond flour.
Drink A LOT of water when eating things made with coconut flour or you could experience a slight stomach ache.
Pictured above is my Valentines pizza. I made it half and half with our preferred toppings, as I usually split this recipe into to personal sized pizzas.
Ingredients:
1 1/2 C Shredded Mozzarella Cheese
2 Tbsp Cream Cheese, cubed
2 Eggs beaten
1/3 C Coconut Flour
Preheat your oven to 425. Line a baking sheet with parchment paper.
Combine the shredded mozzarella and cream cheese in a bowl and microwave for 45 seconds.
Stir, microwave again for 45 seconds. Stir well.
Stir in your eggs and coconut flour. Knead mix with your hands til dough forms. Caution, it may be hot at first!
Spread your dough onto the baking sheet at 1/3" thickness. Use your hands or roll with rolling pin beneath parchment paper to spread and smooth it.
Poke holes across the surface with a toothpick or fork. About every inch to prevent bubbles.
Bake for 6 minutes. Poke holes anywhere bubbles have formed. Bake for 6 more minutes til golden.
Add your toppings. Bake 5 min more.
